- 8 slices thick-cut bacon, chopped
- 1 medium onion, finely diced
- 3 large tomatoes, chopped
- 2 cloves garlic, minced
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 1/2 teaspoon black pepper
Cook chopped bacon in a skillet until crisp. Remove and set aside.
Leave 1–2 tablespoons of bacon fat in the pan.
Add diced onion and cook until soft and golden.
Stir in garlic and cook for 1 minute.
Add tomatoes, brown sugar, vinegar, honey, paprika, salt, and pepper.
Let the mixture simmer on low heat, stirring occasionally.
Stir the crispy bacon back in and cook for 5 more minutes.
- Fresh, ripe tomatoes produce the deepest flavour.
- Adjust sweetness by adding more or less sugar or honey.
- Consistency should be thick enough to coat a spoon.
- Store in the fridge for up to 10 days.
