Ingredients
  

  • 8 slices thick-cut bacon, chopped
  • 1 medium onion, finely diced
  • 3 large tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon black pepper

Instructions
 

  • Cook chopped bacon in a skillet until crisp. Remove and set aside.
  • Leave 1–2 tablespoons of bacon fat in the pan.
  • Add diced onion and cook until soft and golden.
  • Stir in garlic and cook for 1 minute.
  • Add tomatoes, brown sugar, vinegar, honey, paprika, salt, and pepper.
  • Let the mixture simmer on low heat, stirring occasionally.
  • Stir the crispy bacon back in and cook for 5 more minutes.

Notes

  • Fresh, ripe tomatoes produce the deepest flavour.
  • Adjust sweetness by adding more or less sugar or honey.
  • Consistency should be thick enough to coat a spoon.
  • Store in the fridge for up to 10 days.
  • Reheat gently to restore texture before serving.
