- 12 oz pasta (penne or fusilli)
- 2 cups cherry tomatoes
- 1 block (8 oz) feta cheese
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon red chili flakes (optional)
- Salt and pepper to taste
- Fresh basil for garnish
Preheat oven to 400°F (200°C). Place cherry tomatoes and feta in a baking dish.
Drizzle with olive oil, add garlic, oregano, salt, and pepper. Roast 25–30 minutes until tomatoes burst.
Meanwhile, cook pasta according to package directions. Reserve 1/2 cup pasta water.
Mash roasted feta and tomatoes into a creamy sauce. Toss with pasta, adding pasta water if needed.
Garnish with fresh basil and serve hot.
