turmeric powder

red chili powder

garam masala

sprig curry leaves

oil
Salt to taste
Fresh cilantro for garnish
Instructions
Heat oil in a pan over medium heat.
Add mustard seeds and cumin seeds. Let them splutter.
Add chopped onions and green chilies. Sauté until onions turn soft and translucent.
Stir in curry leaves, turmeric powder, and red chili powder. Cook for a minute.
Add chopped tomatoes and salt. Cook until tomatoes soften and release juices.
Add coriander powder and garam masala. Stir well and simmer for a few minutes.
Garnish with fresh cilantro and serve hot with rice or chapati.
Notes
Adjust spice levels according to your preference.
