- ¼ cup Worcestershire sauce
- 2 tablespoons soy sauce
- 1½ tablespoons granulated sugar
- 1 tablespoon rice vinegar
- 1 teaspoon Dijon mustard or Japanese mustard
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon water, if needed
Add ketchup, Worcestershire sauce, soy sauce, sugar, rice vinegar, mustard, garlic powder, onion powder, and black pepper to a small saucepan.
Whisk the ingredients until the sugar begins to dissolve and the mixture becomes smooth and evenly combined.
Place the saucepan over low to medium-low heat. Warm the mixture for about 3–5 minutes, stirring frequently.
If the sauce becomes thicker than you prefer, add a teaspoon of water at a time and stir until the desired consistency is reached.
Remove the saucepan from the heat and allow the sauce to cool completely. It will thicken slightly as it cools.
Serve the tonkatsu sauce alongside crispy tonkatsu, chicken katsu, shrimp, croquettes, shredded cabbage, fries, or sandwiches.
