- 2 tbsp unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced green chilies (canned or fresh)
- 1 cup diced tomatoes (canned or fresh)
- 1 jalapeño, finely chopped (optional, for extra spice)
- 1/4 cup salsa verde
- 2 cup shredded white American cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup whole milk (more as needed)
- 1/4 cup heavy cream
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
- Tortilla chips, for serving
1.Sauté Vegetables :
In a medium saucepan, melt the butter over medium heat.
Add the chopped onion and garlic, cooking until softened, about 3 minutes.
2. Add Chilies and Tomatoes:
Stir in the green chilies, diced tomatoes, jalapeño (if using), and salsa verde.
Cook for 2-3 minutes until heated through
4. Adjust Consistency :
Stir in the milk and heavy cream to achieve your desired consistency.
Add the ground cumin, smoked paprika, salt, and pepper to taste.
