Ingredients
  

  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced green chilies (canned or fresh)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 jalapeño, finely chopped (optional, for extra spice)
  • 1/4 cup salsa verde
  • 2 cup shredded white American cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup whole milk (more as needed)
  • 1/4 cup heavy cream
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Tortilla chips, for serving

Instructions
 

1.Sauté Vegetables :

  • In a medium saucepan, melt the butter over medium heat.
  • Add the chopped onion and garlic, cooking until softened, about 3 minutes.

2. Add Chilies and Tomatoes:

  • Stir in the green chilies, diced tomatoes, jalapeño (if using), and salsa verde.
  • Cook for 2-3 minutes until heated through

3. Melt the Cheese:

  • Reduce heat to low and gradually add the shredded white American cheese and Monterey Jack cheese.
  • Stir constantly until the cheese is fully melted and smooth.

4. Adjust Consistency :

  • Stir in the milk and heavy cream to achieve your desired consistency.
  • Add the ground cumin, smoked paprika, salt, and pepper to taste.

5. Garnish and Serve :

  • Remove from heat and garnish with fresh cilantro.
  • Serve immediately with tortilla chips.

Notes

  • Use freshly grated cheese for the best melting consistency.
  • Adjust the spice level by adding or omitting the jalapeño and using mild or spicy salsa verde.
