- 4 triggerfish fillets (about 6 oz each)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp sea salt
- 2 tbsp fresh parsley, chopped
- Optional: lemon wedges for serving
Pat the triggerfish fillets dry with paper towels and season both sides with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Add the fillets to the skillet and cook for 3-4 minutes on one side until golden brown.
Flip the fillets and add butter and minced garlic to the skillet. Cook for another 3-4 minutes, spooning the butter mixture over the fish.
Add lemon juice and zest, and cook for 1-2 more minutes until the fish is opaque and flakes easily with a fork.
Remove from heat, sprinkle with fresh parsley, and serve immediately with lemon wedges.
