- 12 dried red chilies (such as guajillo or Kashmiri chilies)
- 3 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon caraway seeds
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- 3–4 tablespoons olive oil
- 1 tablespoon lemon juice
- 2–3 tablespoons chili soaking water (as needed)
Place dried chilies in a bowl and cover with hot water. Let them soak for about 20 minutes until soft.
Drain the chilies and remove the stems and seeds if you prefer a milder paste.
Add soaked chilies, garlic, cumin, coriander, caraway seeds, paprika, salt, and lemon juice to a food processor.
Blend while slowly adding olive oil and a little soaking water until a smooth paste forms.
Add more olive oil or water if needed to achieve a thick, spreadable texture.
Transfer the harissa to a jar and drizzle a thin layer of olive oil on top to preserve freshness.
