- 1 lb (450 g) ground turkey
- 4 cups cubed butternut squash
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 cup spinach or kale, chopped (optional)
- 1 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp paprika
For the Sauce:
- 1 cup low-fat milk or unsweetened almond milk
- 1 cup shredded cheddar or mozzarella cheese
- 1 tbsp cornstarch or flour (to thicken)
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
For Topping:

Preheat your oven to 375°F (190°C).
Steam or roast the butternut squash until slightly tender (about 10–12 minutes).
In a large skillet, heat olive oil and sauté onion until translucent.
Add garlic and ground turkey; cook until browned.
Season with thyme, rosemary, paprika, salt, and pepper.
In a saucepan, whisk milk, broth, and cornstarch. Cook until thickened.
Add shredded cheese and Parmesan; mix until creamy.
Combine turkey mixture, sauce, and butternut squash in a large bowl.
Transfer to a greased baking dish.
Garnish with fresh parsley and serve warm.
