Ingredients
  

  • 2 cups cooked turkey (shredded)
  • 1 can (10 oz) red enchilada sauce
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 small flour or corn tortillas
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions
 

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • Sauté onion and garlic in olive oil until soft and fragrant. Stir in turkey, chili powder, cumin, salt, and pepper.
  • Warm tortillas slightly to make them pliable. Spoon a portion of the turkey mixture into each tortilla, roll tightly, and place seam-side down in the baking dish.
  • Pour enchilada sauce evenly over the top, then spread sour cream and sprinkle with both cheeses.
  • Bake uncovered for 25–30 minutes, until hot and bubbly.
  • Garnish with fresh cilantro and serve warm with rice or beans.

Notes

  • Use leftover roasted turkey for convenience and added flavour.
  • Corn tortillas give a more authentic texture, while flour tortillas are softer.
  • Add black beans or corn for extra heartiness.
  • Swap turkey with chicken or ground turkey for a variation.
  • Enchiladas taste even better the next day as the flavors meld together.
