- Turkey giblets (neck, heart, liver, gizzard)
- 4 cups water or turkey broth
- 1 small onion, chopped
- 1 celery stalk, chopped
- 1 carrot, chopped
- 2 tablespoons butter

- 1–2 cups turkey drippings
- Salt and pepper, to taste
