Ingredients
  

  • Turkey giblets (neck, heart, liver, gizzard)
  • 4 cups water or turkey broth
  • 1 small onion, chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1–2 cups turkey drippings
  • Salt and pepper, to taste

Instructions
 

  • Place giblets in a pot with water or broth.
  • Add onion, celery, and carrot.
  • Simmer for 45 minutes to create a flavorful stock.
  • Remove giblets and chop them finely.
  • Strain the stock and set aside.
  • Melt butter in a pan and whisk in flour to form a roux.
  • Slowly add strained stock and turkey drippings.
  • Stir until the gravy thickens.
  • Add chopped egg if desired and serve warm.

Notes

  • Use broth instead of water for a richer flavor.
  • Add more drippings for stronger turkey taste.
  • Chop giblets very finely for a smoother texture.
  • Skip liver if you prefer a milder flavor.
  • Add herbs like thyme or sage for extra aroma.
