Ingredients
  

  • 3 cups cooked turkey, shredded
  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, chopped
  • 1 cup celery, chopped
  • 1 cup green bell pepper, chopped
  • 4 garlic cloves, minced
  • 8 cups chicken or turkey broth
  • 1 cup andouille sausage, sliced (optional)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Whisk in the flour and cook, stirring constantly, until the roux becomes deep brown.
  • Add onion, celery, and bell pepper. Cook until softened.
  • Stir in garlic and cook for one minute.
  • Add broth slowly while stirring to avoid lumps.
  • Add turkey, sausage, smoked paprika, thyme, Cajun seasoning, and bay leaves.
  • Simmer for 45 minutes, stirring occasionally.
  • Season with salt and pepper.

Notes

  • Dark roux gives deeper flavor, so cook until rich brown.
  • Use leftover turkey breast or thigh meat.
  • Add shrimp near the end for a seafood twist.
  • Okra thickens the gumbo naturally.
