Ingredients
  

  • 12 manicotti pasta tubes
  • 2 cups cooked turkey, finely chopped or shredded
  • 1 ½ cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Cook manicotti tubes until slightly firm. Drain and cool.
  • Combine turkey, ricotta, egg, garlic, Parmesan, and seasoning.
  • Season the mixture with salt and pepper.
  • Stuff each manicotti tube with the turkey-cheese mixture.
  • Spread a layer of marinara sauce in a baking dish.
  • Arrange the filled tubes in the dish.
  • Top with mozzarella and extra Parmesan.
  • Garnish with parsley before serving.
