Instructions
 

  • Start by heating olive oil in a large pot over medium heat. Add onions, carrots, and celery, sautéing until they become soft and fragrant. Stir in garlic and cook briefly before adding the shredded turkey and broth. Bring everything to a gentle boil, then reduce heat and let it simmer for about 30 minutes to develop flavor.
  • Meanwhile, prepare the matzo ball mixture. In a bowl, combine matzo meal, eggs, oil, water, and salt. Mix until smooth, then refrigerate for about 20 minutes to firm up. Once chilled, shape the mixture into small balls using damp hands.
  • Bring a separate pot of salted water to a boil and gently drop in the matzo balls. Cover and cook for 20 minutes until they puff up and become light and fluffy. Add the cooked matzo balls to the soup and let them soak up the broth for a few minutes before serving. Garnish with fresh herbs for a finishing touch.
