- 2 cups cooked turkey, shredded or sliced
- 1 tablespoon oil
- 3 cups chicken or turkey broth
- 1 ½ cups coconut milk
- 2 stalks lemongrass, smashed and cut into pieces
- 3 kaffir lime leaves, torn
- 1 small onion, sliced
- 2 Thai chilies (or to taste), halved
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 teaspoon sugar
- Fresh cilantro for garnish
Heat oil in a pot and sauté onions until softened.
Add broth, lemongrass, galangal, and kaffir lime leaves. Simmer for 5–7 minutes to infuse the flavors.
Stir in mushrooms and turkey. Cook for 3 minutes.
Add coconut milk, fish sauce, sugar, and chilies. Simmer gently—do not boil—to preserve the creamy texture.
Remove lemongrass and galangal pieces.
Add lime juice and adjust seasoning to taste.
Garnish with fresh cilantro and serve hot.
