Ingredients
  

  • 2 cups cooked turkey, shredded or sliced
  • 1 tablespoon oil
  • 3 cups chicken or turkey broth
  • 1 ½ cups coconut milk
  • 2 stalks lemongrass, smashed and cut into pieces
  • 3 kaffir lime leaves, torn
  • 1 small onion, sliced
  • 2 Thai chilies (or to taste), halved
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Fresh cilantro for garnish

Instructions
 

  • Heat oil in a pot and sauté onions until softened.
  • Add broth, lemongrass, galangal, and kaffir lime leaves. Simmer for 5–7 minutes to infuse the flavors.
  • Stir in mushrooms and turkey. Cook for 3 minutes.
  • Add coconut milk, fish sauce, sugar, and chilies. Simmer gently—do not boil—to preserve the creamy texture.
  • Remove lemongrass and galangal pieces.
  • Add lime juice and adjust seasoning to taste.
  • Garnish with fresh cilantro and serve hot.

Notes

  • Galangal is traditional, but ginger offers a good substitute.
  • Use full-fat coconut milk for the most authentic, creamy texture.
