Ingredients
  

  • 2 cups cooked turkey, shredded or cubed
  • 1 cup wild rice, uncooked
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream or half-and-half
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat butter and olive oil in a pot over medium heat.
  • Add onions, carrots, and celery. Cook until softened.
  • Stir in garlic and cook for one minute.
  • Add wild rice, broth, thyme, parsley, and bay leaf.
  • Bring to a boil, then reduce heat and simmer for 45 minutes or until rice is tender.
  • Add turkey and stir well. Simmer for 5–10 more minutes.
  • Pour in cream and season with salt and pepper.
  • Remove bay leaf and garnish with fresh parsley before serving.

Notes

  • For a lighter version, use milk instead of cream.
  • Leftover roasted turkey adds great flavour.
  • Use vegetable broth to make it dairy-free and lighter.
  • Wild rice takes longer to cook, but it gives a richer taste.
  • Add mushrooms for extra depth and texture.
