  • 1 cup red lentils
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • ¼ cup rice
  • 2 tbsp bulgur
  • 6 cups vegetable or chicken broth
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • 1 tsp dried mint
  • Fresh parsley for garnish

Instructions
 

  • Rinse the red lentils, rice, and bulgur thoroughly under cold water.
  • Heat olive oil or butter in a large pot over medium heat.
  • Add chopped onion and garlic and sauté until soft and fragrant.
  • Stir in the tomato paste and cook for 1–2 minutes to deepen the flavor.
  • Add the lentils, rice, bulgur, and broth, then mix well.
  • Bring the soup to a gentle boil, then reduce heat and simmer for 25 minutes.
  • Add paprika, dried mint, salt, and pepper, stirring well.
  • If desired, blend the soup slightly for a smoother texture.
  • Finish with lemon juice and garnish with fresh parsley before serving.
