- Salt and freshly ground black pepper

- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- ½ cup chicken broth
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- ⅓ cup sun-dried tomatoes (chopped)
- 1 cup fresh spinach
- ½ teaspoon red pepper flakes (optional)

Pat pork tenderloin dry and season generously with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat.
