  • 1 cup whole milk
  • 1/2 cup unsalted butter, softened
  • 2 cups shredded cheddar cheese, divided
  • 8 slices cooked bacon, crumbled
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1/4 cup chopped green onions (plus extra for topping)

Instructions
 

  • Prepare the Potatoes
    Preheat oven to 350°F (175°C). Peel and cube the baked potatoes into chunks.
  • Mix the Filling
    Place potatoes in a large bowl. Add sour cream, milk, butter, garlic powder, salt, and pepper. Mix gently until creamy but still slightly chunky.

    Stir in 1½ cups cheddar cheese, bacon, and green onions. Mix lightly to blend evenly.
