For the Rolls:
- 1 large cabbage (leaves separated)
- 2 cups beet greens (washed and chopped)
- 1 cup rice (uncooked)
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- 1 carrot (grated)
- 2 tbsp vegetable oil
- Salt and pepper to taste
- 1 tsp paprika
For the Sauce:
- 2 cups tomato sauce
- 1 tbsp tomato paste
- 1 tbsp sour cream (optional)
- 1 tsp sugar
- Salt to taste
Prepare the cabbage leaves: Boil the whole cabbage in salted water until leaves soften. Remove and set aside.
Cook the rice: Partially cook rice until slightly tender; drain.
Make the filling: Heat oil in a pan, sauté onion, garlic, and carrot until soft. Add beet greens and cook until wilted.
Combine: Mix vegetables with rice, dill, salt, pepper, and paprika.
Assemble rolls: Place a spoonful of filling on each cabbage leaf and roll tightly.
Prepare sauce: Mix tomato sauce, paste, sugar, and salt.
Cook rolls: Arrange rolls in a pot, pour sauce over, cover, and simmer for 45–60 minutes.
Finish: Add sour cream if desired before serving.
