Ingredients
  

  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (120ml) milk
  • 1/4 cup (60ml) vegetable oil or melted butter
  • 2 large eggs
  • 2 tsp vanilla extract

Instructions
 

  • Preheat the oven:
    Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • Mix dry ingredients:
    In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Combine wet ingredients:
    In another bowl, whisk together milk, oil, eggs, and vanilla extract until smooth.
  • Combine mixtures:
    Gradually pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing.
  • Fill muffin cups:
    Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake:
    Place the muffin tin in the oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool:
    Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
