For the Soup
- 2 tablespoons extra-virgin olive oil
- 1 medium yellow onion, finely chopped
- 2 medium carrots, diced
- 2 celery stalks, finely diced
- 3 cloves garlic, minced
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon black pepper
- ¾ teaspoon salt, or to taste
- 1 cup unsweetened oat milk or unsweetened almond milk
- 2 tablespoons fresh parsley, chopped

Prepare the Vegetables
Wash and prepare all the vegetables.Peel the potatoes and cut them into approximately ½-inch cubes so they cook evenly.Finely chop the onion, dice the carrots and celery, and mince the garlic.
Sauté the Aromatics
Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.Add the chopped onion, carrots, and celery.Cook for approximately 6–8 minutes, stirring occasionally, until the vegetables soften and the onion becomes translucent.
Add the Garlic
Add the minced garlic.Cook for approximately 30–60 seconds, stirring frequently until fragrant.Be careful not to burn the garlic
Add the Potatoes
Add the cubed potatoes to the pot.Stir well so the potatoes become coated with the sautéed vegetables and olive oil.
Add the Broth and Seasonings
