Ingredients

For the Eggplants

  • 2 medium eggplants
  • 3 tablespoons extra-virgin olive oil, divided
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Vegetable Filling

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 medium ripe tomatoes, diced
  • 1 red bell pepper, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes, optional
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • ½ cup water or vegetable broth

For Garnishing

  • 2 tablespoons chopped fresh parsley
  • A drizzle of extra-virgin olive oil
  • Lemon wedges, optional

Instructions

  • First, preheat your oven to 200°C (400°F). Wash the eggplants and pat them dry with a clean towel.
Cut each eggplant in half lengthwise. Score the flesh lightly in a crosshatch pattern, taking care not to cut through the skin.
Brush the cut surfaces with olive oil. Sprinkle them with salt and black pepper.
  • Arrange the eggplant halves cut-side up on a baking tray. Roast them for approximately 25–30 minutes, until the flesh begins to soften.
Meanwhile, prepare the vegetable filling. The eggplants will finish cooking after you add the filling.
  • Heat two tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and cook for five minutes until softened.
Next, add the minced garlic and bell pepper. Cook for another three minutes, stirring occasionally to prevent the garlic from burning.
  • Add the diced tomatoes, tomato paste, cumin, paprika, red pepper flakes, salt, and black pepper.
Stir everything together and cook for approximately 8–10 minutes. The tomatoes should soften and form a thick, aromatic mixture.
Finally, add the chopped parsley and remove the skillet from the heat.
  • Remove the partially roasted eggplants from the oven. Gently press down the softened flesh with a spoon to create space for the filling.
Divide the tomato mixture evenly among the eggplant halves. Spoon the filling generously over the exposed flesh.
Pour the water or vegetable broth into the bottom of the baking dish. This helps keep the eggplants moist during the final baking stage.
  • Return the stuffed eggplants to the oven. Bake for another 20–25 minutes, until the eggplants become completely tender.
The filling should look rich and slightly caramelized. If the tops brown too quickly, cover the dish loosely with foil.
  • Remove the baking dish from the oven. Allow the eggplants to rest for five minutes before serving.
Sprinkle fresh parsley over the top and add a small drizzle of olive oil. Serve warm or at room temperature with rice, crusty bread, or a refreshing salad.

Notes

  • Choose firm eggplants with smooth, shiny skin.
  • Use ripe tomatoes for a naturally sweet filling.
  • Avoid cutting through the eggplant skin when scoring.
  • Roast the eggplants before stuffing for a tender result.
  • Cook the tomato mixture until excess liquid reduces.
  • Adjust the spices according to your preferred heat level.
  • Add enough broth to prevent the baking dish from drying out.
  • Store leftovers in an airtight container in the refrigerator.
