  • 1½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon espresso powder (optional)

Wet Ingredients

  • 2 cups grated zucchini
  • ½ cup unsweetened applesauce
  • ½ cup vegetable oil or melted coconut oil
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and espresso powder.
  • In another bowl, combine applesauce, oil, brown sugar, granulated sugar, and vanilla until smooth.
  • Fold the grated zucchini into the wet mixture.
  • Gradually stir the dry ingredients into the wet ingredients until just combined.
  • Fold in the dairy-free chocolate chips and nuts if using.
  • Spread the batter evenly into the prepared baking pan.
  • Bake for 30–35 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow the brownies to cool completely before slicing for the best fudgy texture.
