Ingredients
  

For the Rice

  • 2 cups aged basmati rice
  • 6 cups water, or enough for boiling
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 3 green cardamoms
  • 4 cloves
  • 1 star anise
  • 1 teaspoon salt

For the Vegetable Masala

  • 2 tablespoons cooking oil
  • 1 tablespoon ghee
  • 1 large onion, thinly sliced
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit
  • 2 medium tomatoes, chopped
  • 1 medium potato, cubed
  • ½ cup green beans, chopped
  • ½ cup green peas
  • ½ cup plain yogurt
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • ¼ cup chopped fresh cilantro
  • ¼ cup fresh mint leaves

For Layering

  • ½ teaspoon saffron
  • 3 tablespoons warm milk
  • ½ cup fried onions
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped cilantro

Instructions
 

  • Rinse the basmati rice several times until the water becomes relatively clear. Soak it in plenty of water for about 30 minutes, then drain thoroughly.
  • Place the saffron strands in warm milk and let them sit for 10–15 minutes. This allows the saffron to release its beautiful color and aroma.
  • Bring 6 cups of water to a vigorous boil. Add the bay leaf, cinnamon, cardamoms, cloves, star anise, black cardamom, and salt.
  • Heat oil and ghee in a large heavy-bottomed pan. Add cumin seeds and allow them to sizzle.
  • Add the potato, carrot, beans, peas, and cauliflower. Sprinkle in turmeric, chili powder, coriander powder, cumin powder, garam masala, and salt.
  • Lower the heat and add whisked yogurt. Stir continuously so the yogurt blends smoothly into the masala.
  • Spread half of the vegetable masala evenly in the bottom of the pan.
  • Add the remaining vegetable masala followed by the remaining rice.
  • You can place a flat tawa underneath the biryani pot to distribute the heat gently and reduce the risk of burning the bottom.
  • Open the lid and gently fluff the biryani from the sides using a fork or flat spoon. Avoid vigorous mixing because it can break the rice grains.
  • Serve hot with cucumber raita, onion salad, pickle, papad, or your favorite Indian side dish.

Notes

  • Rice matters: Use good-quality aged basmati rice for long, separate grains.
  • Do not overcook the rice: The rice should be around 75% cooked before layering.
  • Keep the masala thick: A watery vegetable mixture can make the rice soggy.
  • Use fresh herbs: Fresh mint and cilantro provide much of the biryani's characteristic aroma.
  • Adjust spice: Reduce the green chilies and chili powder for a milder biryani.
  • Yogurt: Whisk the yogurt before adding it to prevent lumps.
  • Dum cooking: Keep the heat very low during the final cooking stage.
  • Resting is important: Allowing the biryani to rest for 10 minutes helps the flavors settle.
