Rinse the basmati rice several times until the water becomes relatively clear. Soak it in plenty of water for about 30 minutes, then drain thoroughly.
Place the saffron strands in warm milk and let them sit for 10–15 minutes. This allows the saffron to release its beautiful color and aroma.
Bring 6 cups of water to a vigorous boil. Add the bay leaf, cinnamon, cardamoms, cloves, star anise, black cardamom, and salt.
Heat oil and ghee in a large heavy-bottomed pan. Add cumin seeds and allow them to sizzle.
Add the potato, carrot, beans, peas, and cauliflower. Sprinkle in turmeric, chili powder, coriander powder, cumin powder, garam masala, and salt.
Lower the heat and add whisked yogurt. Stir continuously so the yogurt blends smoothly into the masala.
Spread half of the vegetable masala evenly in the bottom of the pan.
Add the remaining vegetable masala followed by the remaining rice.
You can place a flat tawa underneath the biryani pot to distribute the heat gently and reduce the risk of burning the bottom.
Open the lid and gently fluff the biryani from the sides using a fork or flat spoon. Avoid vigorous mixing because it can break the rice grains.
Serve hot with cucumber raita, onion salad, pickle, papad, or your favorite Indian side dish.
