Ingredients
  

  • 1 ½ lbs ground beef, turkey, or chicken
  • 1 cup finely grated zucchini
  • 1 medium carrot, grated
  • ½ cup finely chopped spinach or bell peppers
  • 1 small onion, finely diced
  • 2 eggs
  • 1 cup breadcrumbs or oats
  • ½ cup milk
  • 2 tbsp ketchup (plus extra for glaze)
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground meat, eggs, breadcrumbs, and seasoning.
  • Add finely grated vegetables and mix gently until combined.
  • Shape the mixture into a loaf and place it on a baking sheet.
  • Spread glaze evenly on top.
  • Bake for 55–65 minutes, or until cooked through.
  • Let rest for 10 minutes before slicing and serving.
