Ingredients
  

For the Dough

  • 2 cups all-purpose flour
  • 3 tbsp oil or ghee
  • ½ tsp salt
  • Water (as needed)

For the Filling

  • 2 medium potatoes (boiled and mashed)
  • ½ cup green peas
  • 1 small onion (finely chopped)
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • ½ tsp garam masala
  • 1 green chili (finely chopped)
  • Salt to taste

For Frying

  • Oil for deep frying

Instructions
 

Prepare the Dough

  • In a bowl, mix flour, salt, and oil.
    Add water gradually and knead into a firm dough.
    Cover and let it rest for 15 minutes.

Make the Filling

  • Heat oil in a pan and add cumin seeds.
    Add chopped onions and sauté until translucent.
    Add peas, mashed potatoes, turmeric, coriander powder, garam masala, and salt.
    Mix well and cook for 3–4 minutes.
    Add green chili and coriander leaves, then let the mixture cool.

Shape the Samosas

  • Divide dough into small balls and roll into oval shapes.
    Cut each oval in half.
    Form a cone with one half and seal the edge with water.
    Fill with potato mixture and seal the top.

Fry the Samosas

  • Heat oil in a deep pan on medium heat.
    Fry samosas until golden brown and crispy.
    Remove and place on paper towels.

  • The dough should be slightly firm for crispy samosas.
  • Always cool the filling before stuffing.
  • Fry on medium heat for even cooking.
  • Do not overcrowd the pan while frying.
