For the Cake
- 180 g all-purpose flour
- 120 g finely ground hazelnuts
- 30 g unsweetened cocoa powder
- 150 g unsalted butter, softened
- 150 g granulated sugar
- 4 large eggs, room temperature
- 100 g dark chocolate, melted and slightly cooled
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 1 teaspoon instant espresso powder, optional
For the Chocolate Finish
- 100 g dark chocolate
- 80 ml heavy cream
- 1 teaspoon unsalted butter
For Decoration
- Powdered sugar, optional
- Toasted chopped hazelnuts, optional
- Fresh berries, optional
Preheat the oven to 175°C (350°F).
Grease a 22–23 cm round cake pan and line the bottom with parchment paper.
Melt the dark chocolate gently over a double boiler or in short microwave intervals.Stir until smooth and allow it to cool slightly. Beat the softened butter and sugar together for approximately 3–5 minutes until light and creamy. This helps incorporate air into the batter. Add the eggs one at a time, beating well after each addition.Add the vanilla extract. Add the dry ingredients in two or three additions, alternating with the milk.Fold or mix gently until just combined. Pour the batter into the prepared pan.Smooth the top gently. Allow the cake to cool in the pan for approximately 10–15 minutes.Remove it from the pan and place it on a wire rack.Allow it to cool completely before glazing. Place the cooled cake on a wire rack over a tray.Pour the chocolate glaze over the top and gently spread it toward the edges.Allow the glaze to drip naturally down the sides. Serve with coffee, tea, lightly sweetened whipped cream, or fresh berries.
- Toast the hazelnuts: Lightly toasted nuts provide a deeper, more aromatic flavor.
- Use good chocolate: Chocolate has a major influence on the final taste.
- Use room-temperature eggs: They incorporate more easily into the batter.
- Don't overmix: Excessive mixing can create a dense cake.
- Cool before glazing: Warm cake can cause the chocolate glaze to become uneven.
- Espresso is optional: A small amount enhances chocolate flavor without making the cake taste strongly of coffee.
- Keep the glaze thin: A delicate chocolate coating complements the nutty cake without overwhelming it.
- Let the cake rest: The flavor often becomes even richer after several hours.
