Ingredients
  

For the Sardines

  • 500–600 g fresh sardines, cleaned and gutted
  • 1 tablespoon neutral cooking oil
  • 2 cloves garlic, finely minced
  • 1 teaspoon fresh ginger, finely grated
  • 1 small red chili, thinly sliced
  • 2 green onions, sliced
  • ½ teaspoon freshly ground black pepper

For the Caramel Sauce

  • 3 tablespoons granulated sugar
  • 2 tablespoons warm water
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • ½ teaspoon sesame oil
  • ½ cup water

For Finishing

  • 1 tablespoon fresh lime juice
  • Fresh cilantro, chopped
  • Sliced green onions
  • Extra fresh chili, optional
  • Toasted sesame seeds, optional

Instructions
 

Prepare the Sardines

  • Clean the sardines thoroughly if they have not already been prepared.
    Remove the scales, guts, and any unwanted fins if necessary. Rinse briefly and pat the fish completely dry with paper towels.
    Keeping the sardines dry helps them brown rather than steam.

Season the Fish

  • Lightly season the sardines with freshly ground black pepper.
    Avoid adding much salt because fish sauce and soy sauce will provide plenty of saltiness.

Prepare the Caramel Ingredients

  • Measure the sugar, warm water, fish sauce, soy sauce, rice vinegar, sesame oil, and water before beginning.
    Caramel can develop quickly, so having everything ready makes the cooking process easier.

Sear the Sardines

  • Heat the oil in a large skillet over medium-high heat.
    Arrange the sardines in a single layer without overcrowding the pan.
    Cook for approximately 2–3 minutes per side, depending on their size, until lightly browned.
    Transfer the sardines to a plate.

Make the Caramel

  • Reduce the heat to medium.
    Add the sugar to the same skillet and allow it to melt gradually.
    Once the sugar begins turning golden amber, carefully add the warm water.
    Stand back slightly because the mixture may bubble vigorously.
    Stir gently until the caramel dissolves into a smooth sauce.

Add the Aromatics

  • Add the minced garlic, grated ginger, and sliced chili to the caramel sauce.
    Cook for approximately 30–60 seconds, until fragrant.
    Be careful not to burn the garlic.

Return the Sardines

  • Carefully place the sardines back into the skillet.
    Spoon the caramel sauce over the fish.
    Reduce the heat to low and simmer gently for approximately 8–10 minutes.
    Turn the sardines carefully once during cooking if needed.

Reduce the Sauce

  • Continue simmering uncovered until the liquid reduces into a glossy, slightly thickened sauce.
    The caramel should coat the sardines without becoming excessively thick or bitter.

Finish with Lime

  • Turn off the heat.
    Add fresh lime juice and gently spoon the sauce over the sardines.
    Taste and adjust the balance if necessary.

Garnish

  • Transfer the sardines to a serving plate.
    Top with sliced green onions, fresh cilantro, and additional chili if desired.
    Serve immediately with steamed jasmine rice.

Notes

  • Use fresh sardines when possible: Fresh fish gives the best texture and flavor.
  • Dry the fish thoroughly: Excess moisture can prevent proper browning.
  • Watch the caramel carefully: Sugar can quickly change from golden to burnt.
  • Use warm water: Adding cold water to hot caramel can cause excessive splattering.
  • Be careful with fish sauce: It is highly concentrated, so add it gradually if you prefer a milder flavor.
  • Cook gently after adding the sauce: Vigorous boiling can cause delicate sardines to break apart.
  • Add lime at the end: Fresh citrus tastes brighter when it is not cooked for a long time.
  • Remove bones carefully if desired: Small sardine bones soften during cooking, but larger bones can still be removed before serving.
