For the Beef Marinade
- 1 pound beef sirloin, thinly sliced
- 2 stalks lemongrass, finely minced
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- ½ teaspoon black pepper
For the Noodle Bowl
- 8 ounces rice vermicelli noodles
- 1 cucumber, julienned
- 1 carrot, julienned
- 2 cups lettuce, shredded
- ½ cup fresh mint leaves
- ½ cup fresh cilantro
- ¼ cup roasted peanuts, chopped
For the Dressing
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 2 tablespoons water
- 1 garlic clove, minced
- 1 small red chili, finely sliced
Combine lemongrass, garlic, soy sauce, fish sauce, sugar, sesame oil, and pepper.
Add beef and marinate for at least 20 minutes.
Cook rice vermicelli noodles according to package directions.
Drain and rinse noodles under cold water.
Mix all dressing ingredients until sugar dissolves.
Heat a skillet or grill pan over medium-high heat.
Cook marinated beef for 3–5 minutes until browned and tender.
Arrange lettuce, cucumber, and carrots in serving bowls.
Add rice noodles over the vegetables.
