Ingredients
  

For the Beef Marinade

  • 1 pound beef sirloin, thinly sliced
  • 2 stalks lemongrass, finely minced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper

For the Noodle Bowl

  • 8 ounces rice vermicelli noodles
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 2 cups lettuce, shredded
  • ½ cup fresh mint leaves
  • ½ cup fresh cilantro
  • ¼ cup roasted peanuts, chopped

For the Dressing

  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 2 tablespoons water
  • 1 garlic clove, minced
  • 1 small red chili, finely sliced

Instructions
 

  • Combine lemongrass, garlic, soy sauce, fish sauce, sugar, sesame oil, and pepper.
  • Add beef and marinate for at least 20 minutes.
  • Cook rice vermicelli noodles according to package directions.
  • Drain and rinse noodles under cold water.
  • Mix all dressing ingredients until sugar dissolves.
  • Heat a skillet or grill pan over medium-high heat.
  • Cook marinated beef for 3–5 minutes until browned and tender.
  • Arrange lettuce, cucumber, and carrots in serving bowls.
  • Add rice noodles over the vegetables.
  • Top with cooked lemongrass beef.
  • Garnish with mint, cilantro, and peanuts.
