Ingredients

For the Salad

  • 4 small heads baby bok choy, halved lengthwise or chopped
  • 3 medium beets, peeled and cut into small wedges or cubes
  • 100 g feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 small red onion, thinly sliced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons toasted walnuts or pumpkin seeds, optional
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the Lemon-Balsamic Dressing

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove, finely minced
  • A pinch of salt
  • A pinch of freshly ground black pepper

Instructions

  • Preheat your oven to 200°C (400°F). Wash, peel, and cut the beets into evenly sized wedges or cubes.
Place them in a mixing bowl and toss with 1 tablespoon of olive oil, a pinch of salt, and black pepper. Spread the beets in a single layer on a baking tray.
Roast for approximately 30–40 minutes, turning them halfway through cooking. They are ready when they become tender and can be easily pierced with a fork. Smaller pieces may cook more quickly.
  • While the beets roast, wash the bok choy thoroughly under running water. Dirt can collect near the base, so separate the leaves slightly and rinse carefully.
Trim the bottom ends if necessary. Halve small bok choy heads lengthwise or chop them into bite-sized pieces. Pat dry with a clean kitchen towel to prevent excess moisture during cooking.
  • In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, Dijon mustard, honey or maple syrup, minced garlic, salt, and black pepper.
Continue whisking until the ingredients are well combined. Taste the dressing and adjust the acidity or sweetness according to your preference.
  • Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the sliced red onion and cook for 2–3 minutes until slightly softened.
Add the minced garlic and cook for approximately 30 seconds, stirring continuously to prevent burning.
Place the bok choy in the skillet, cut side down if using halved heads. Cook for 2–3 minutes, then turn and cook for another 2–3 minutes. The stems should become tender-crisp while the leaves soften.
Season lightly with salt and black pepper.
Transfer the warm bok choy to a large serving bowl or platter. Add the roasted beets and cooked red onion.
Drizzle some of the prepared dressing over the vegetables and toss gently. If you prefer a more attractive presentation, arrange the bok choy and beets on the platter instead of tossing them together completely.
  • Sprinkle the crumbled feta cheese over the warm vegetables. The gentle warmth will soften the cheese slightly, creating a creamy contrast with the tender beets and crisp bok choy.
Add chopped fresh parsley and toasted walnuts or pumpkin seeds if desired.
  • Drizzle the remaining dressing over the salad just before serving. Add freshly ground black pepper and taste for seasoning.
Serve immediately while the bok choy and beets are still warm. This salad pairs beautifully with crusty bread, grilled vegetables, roasted chicken, baked fish, or a bowl of lentil soup.

Notes

  • Choose fresh bok choy: Look for firm stems and fresh green leaves without yellowing or wilting.
  • Cut beets evenly: Uniform pieces help the beets roast at the same rate.
  • Roast until tender: The beets should be easily pierced with a fork but should still hold their shape.
  • Dry the bok choy: Removing excess moisture helps it sauté instead of steam.
  • Avoid overcooking: Bok choy tastes best when the stems remain slightly crisp.
  • Add feta at the end: This preserves its texture and tangy flavor.
  • Balance the dressing: Lemon juice and balsamic vinegar complement the sweetness of the beets.
