Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 cups vegetable or chicken broth
  • 1 cup canned crushed tomatoes
  • ½ cup natural peanut butter
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon ground coriander
  • Salt and black pepper to taste
  • 1 cup sweet potatoes, diced
  • 1 cup spinach or kale, chopped

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Sauté onion until soft, then add garlic and ginger.
  • Stir in tomatoes, paprika, cayenne, and coriander; cook for 3–4 minutes.
  • Add broth and sweet potatoes; simmer until tender.
  • Whisk in peanut butter until smooth and creamy.
  • Add greens and optional protein; simmer 5 more minutes.
  • Adjust seasoning and garnish before serving.

  • Use natural peanut butter for best flavour.
  • Stir well to prevent sticking.
  • Adjust spice level gradually.
