Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz) white beans, drained
  • 1 can (4 oz) diced green chiles
  • 3 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp oregano
  • Salt and pepper to taste
  • ½ cup sour cream

Instructions
 

  • Heat olive oil in a pot and sauté onions until soft.
  • Add garlic and cook for 1 minute.
  • Stir in white beans, green chiles, chicken broth, and spices.
  • Add the shredded chicken and bring to a simmer.
  • Cook for 15 minutes to blend flavors.
  • Reduce heat and stir in sour cream and cheese until melted.
  • Season with salt and pepper.

  • Use rotisserie chicken for faster preparation.
  • Adjust thickness by adding more broth or mashing some beans.
  • Pepper Jack cheese adds extra heat.
