- 2 large white sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika (optional)
- 1 tbsp chopped fresh parsley (for garnish)
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, and smoked paprika (if using).
Spread the seasoned sweet potatoes evenly on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and tender.
Remove from the oven and let cool for 5 minutes.
