Ingredients
  

  • 2 large white sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika (optional)
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, and smoked paprika (if using).
  • Spread the seasoned sweet potatoes evenly on the prepared baking sheet.
  • Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and tender.
  • Remove from the oven and let cool for 5 minutes.
  • Transfer to a serving dish and garnish with chopped parsley. Serve warm and enjoy!

Notes

  • For extra crispiness, avoid overcrowding the baking sheet.
  • Adjust seasonings to taste; cinnamon and nutmeg work well for a sweeter version.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
