Ingredients
  

For the Wontons

  • 24–30 wonton wrappers
  • ½ pound ground pork
  • 3 tablespoons finely chopped green onions
  • 1 tablespoon fresh ginger, finely grated
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon cornstarch
  • ½ teaspoon sugar
  • ¼ teaspoon white pepper

For the Soup

  • 6 cups chicken broth
  • 1-inch piece fresh ginger, sliced
  • 2 cloves garlic, lightly crushed
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 2 green onions, thinly sliced
  • 1 teaspoon chili oil, optional

Instructions
 

  • In a large bowl, combine the ground pork, green onions, ginger, garlic, soy sauce, sesame oil, rice vinegar, cornstarch, sugar, white pepper, and salt.
  • Place one wonton wrapper on a clean work surface. Keep the remaining wrappers covered with a slightly damp kitchen towel so they don't dry out.
  • Place approximately 1 teaspoon of filling in the center of each wrapper.
  • Fold the wrapper into your preferred wonton shape and press the edges firmly together, making sure there are no open seams.
  • Place the chicken broth, water, ginger, garlic, soy sauce, and sesame oil in a large pot.
  • Carefully add the wontons in batches, making sure they don't stick together.
  • The vegetables should become tender while retaining some fresh texture.
  • Remove the ginger and garlic pieces if desired.
  • Garnish with sliced green onions, cilantro, sesame seeds, or chili oil.
  • Serve immediately.

Notes

  • Keep wrappers covered: Wonton wrappers dry quickly when exposed to air.
  • Don't overfill: About 1 teaspoon of filling is usually enough.
  • Seal carefully: A tight seal prevents the filling from escaping during cooking.
  • Use a gentle boil: Aggressive boiling can tear delicate wrappers.
  • Don't overcrowd the pot: Cook wontons in batches if necessary.
