Ingredients
  

  • 100 grms dried wood ear mushrooms
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • 1 green onion, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions
 

Soak the Mushrooms :

  • Place the dried wood ear mushrooms in warm water and let them soak for 10-15 minutes until fully rehydrated. Rinse thoroughly and trim any tough stems.

Prepare the Sauce :

  • In a small bowl, mix soy sauce, oyster sauce, sesame oil, and sugar. Set aside.

Cook the Aromatics :

  • Heat vegetable oil in a large pan or wok over medium heat. Sauté garlic and ginger until fragrant, about 1-2 minutes.

Add the Mushrooms :

  • Increase the heat to medium-high and add the soaked wood ear mushrooms. Stir-fry for 5-7 minutes until they are heated through and slightly crispy.

Add the Sauce :

  • Pour the prepared sauce over the mushrooms and toss to coat evenly. Cook for another 2 minutes to allow the flavors to meld.

Serve :

  • Remove from heat, garnish with chopped green onions and sesame seeds, and serve hot as a side dish or over steamed rice.

Notes

  • Wood ear mushrooms have a mild flavor, so the seasoning is key to enhancing the dish.
  • Ensure the mushrooms are thoroughly cleaned to remove any grit.
