Ingredients
  

For the Dumpling Filling

  • 250 g ground pork, chicken, or beef
  • 1 cup cabbage, finely chopped
  • ½ cup carrots, finely grated or chopped
  • 2 green onions, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon soy sauce
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or as needed
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch

For the Dumplings

  • 20 dumpling wrappers
  • Small bowl of water for sealing
  • Oil for frying

For the Dipping Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • ½ teaspoon sugar or honey
  • ½ teaspoon sesame seeds
  • 1 green onion, finely chopped

Instructions
 

Prepare the Vegetables

  • Finely chop the cabbage, carrots, and green onions. If the cabbage contains excess moisture, lightly squeeze it before adding it to the filling mixture.

Make the Filling

  • In a large bowl, combine the ground meat, cabbage, carrots, green onions, garlic, ginger, soy sauce, sesame oil, black pepper, salt, sugar, egg, and cornstarch. Mix thoroughly until all ingredients are evenly combined.

Fill the Dumplings

  • Place one dumpling wrapper on a clean surface. Add approximately 1 tablespoon of filling to the center. Avoid overfilling the wrapper.

Seal the Mandu

  • Dip your finger in water and lightly moisten the edges of the wrapper. Fold the wrapper in half over the filling and press the edges firmly to seal. Create small pleats along the edge if desired.

Prepare the Dipping Sauce

  • Combine the soy sauce, rice vinegar, sesame oil, sugar or honey, sesame seeds, green onion, and optional chili flakes in a small bowl. Stir well.

Heat the Oil

  • Pour enough oil into a frying pan or deep pot for frying. Heat the oil over medium heat until hot.

Fry the Dumplings

  • Carefully add the dumplings in small batches. Fry for approximately 3 to 5 minutes, turning occasionally, until they are golden brown, crispy, and fully cooked.

Drain and Serve

  • Remove the crispy Yaki Mandu from the oil and place them on a paper towel or wire rack. Serve immediately with the prepared dipping sauce.

Notes

  • Finely chop all vegetables to ensure the filling cooks evenly.
  • Do not overfill the dumplings, as this may cause them to burst during cooking.
  • Seal the edges tightly to prevent the filling from leaking.
  • Keep unused dumpling wrappers covered to prevent them from drying out.
  • Ground pork provides a traditional and juicy filling.
  • Tofu can be used for a vegetarian variation.
  • Fry the dumplings in small batches for even browning.
  • Always ensure meat-filled dumplings are thoroughly cooked before serving.
