Ingredients
  

  • 1 box (3 oz / 85 g) lemon-flavored gelatin
  • 1 cup boiling water
  • ½ cup pineapple juice
  • ½ cup orange juice
  • ½ cup vodka
  • ¼ cup light rum
  • ¼ cup amaretto
  • Maraschino cherries, for garnish
  • Nonstick cooking spray, for cups

Instructions
 

Prepare the Cups

  • Arrange approximately 24 small 1-ounce plastic or disposable shot cups on a tray. Lightly coat the inside of each cup with nonstick cooking spray so the finished shots release more easily.

Dissolve the Gelatin

  • Place the lemon gelatin in a large heatproof mixing bowl. Pour in the boiling water and whisk continuously for about 1–2 minutes, until the gelatin has completely dissolved.

Add the Fruit Juices

  • Pour in the pineapple juice and orange juice. Stir well to combine.

Add the Alcohol

  • Allow the mixture to cool for a few minutes so it is warm rather than extremely hot. Add the vodka, light rum, and amaretto. Stir gently until everything is evenly incorporated.

Fill the Cups

  • Carefully pour the mixture into the prepared cups, filling each about ¾ full.

Add Garnishes

  • For a festive appearance, place a small piece of maraschino cherry or a tiny orange piece on top of each shot.

Refrigerate

  • Transfer the tray carefully to the refrigerator. Chill for at least 3–4 hours, or until the gelatin is completely firm.

Serve

  • Serve cold directly from the refrigerator. Keep any remaining shots refrigerated until serving.
