- 1 lb yu choy (washed and trimmed)
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp oyster sauce (optional)
- 1/2 tsp tsp sugar (optional)
- 2 tbsp water
- Sesame seeds or chopped green onions for garnish
Heat vegetable oil in a large wok or skillet over medium-high heat.
Add minced garlic and stir-fry for 30 seconds until fragrant.
Add the yu choy and stir-fry for 2-3 minutes until the leaves wilt slightly
In a small bowl, mix soy sauce, sesame oil, oyster sauce, sugar, and water. Pour over the yu choy.
Stir-fry for an additional 3-5 minutes until the stems are tender but still crisp.
Remove from heat and garnish with sesame seeds or green onions before serving.
- Adjust the seasoning to suit your taste. Add chili flakes for a spicy kick.
- Avoid overcooking yu choy to maintain its vibrant green color and crunch.
