For the Salad
- 6 ounces dried yuba sheets or fresh yuba
- 8 ounces soba noodles or rice noodles
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 1 cup edamame, cooked
- 3 green onions, sliced
- ½ cup fresh cilantro or shiso leaves
- 1 tablespoon toasted sesame seeds
- ¼ cup chopped roasted peanuts (optional)
For the Sesame Dressing
- 3 tablespoons soy sauce or tamari
- 2 tablespoons toasted sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup or honey
- 1 tablespoon fresh lime juice
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon tahini or sesame paste
- 2–3 tablespoons water to adjust consistency

If using dried yuba, soak it in warm water according to package instructions until soft. Drain and cut into thin strips.
Cook the soba noodles or rice noodles according to package directions. Rinse under cold water and drain well.
Prepare the sesame dressing by whisking together soy sauce, sesame oil, rice vinegar, maple syrup, lime juice, ginger, garlic, tahini, and water until smooth.
Prepare the vegetables by slicing the cucumber, carrots, bell pepper, and green onions.
Add noodles and yuba to a large bowl.
Add vegetables, edamame, and fresh herbs.
Pour the sesame dressing over the salad and gently toss until everything is evenly coated.
