- 1 medium cauliflower (cut into florets)
- ½ cup cherry tomatoes (halved)
- ½ cup black or green olives
- ½ cup bell peppers (sliced)
- ¼ cup red onion (thinly sliced)
- ¼ cup marinated artichoke hearts
- 2 tbsp fresh parsley (chopped)
For the Dressing:
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp lemon juice
- 1 clove garlic (minced)
- ½ tsp dried oregano
- Salt and pepper to taste
Bring a pot of salted water to a boil and blanch cauliflower florets for 3–5 minutes until slightly tender but still crisp. Drain and cool.
In a large bowl, combine cauliflower, tomatoes, olives, bell peppers, onion, and artichokes.
In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and pepper.
Pour dressing over the salad and toss well to coat.
Add fresh parsley and mix gently.
Chill for at least 15–20 minutes to allow flavors to develop.
Serve cold or at room temperature.
