Ingredients
  

For the Chicken

  • 2½ pounds boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 medium onion, finely sliced
  • 3 garlic cloves, minced

Zesty BBQ Sauce

  • 1½ cups barbecue sauce
  • ½ cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon black pepper

For Serving

  • Hamburger buns
  • Coleslaw
  • Dill pickle slices
  • Sliced red onions

Instructions
 

  • Lightly grease the slow cooker with olive oil.
  • Place the sliced onions and minced garlic in the bottom of the slow cooker.
  • Arrange the chicken on top of the onions.
  • In a bowl, whisk together the barbecue sauce, chicken broth, apple cider vinegar, Dijon mustard, Worcestershire sauce, brown sugar, lemon juice, smoked paprika, garlic powder, onion powder, black pepper, chili powder, and cayenne pepper.
  • Pour the sauce evenly over the chicken.
  • Cover and cook on Low for 5–6 hours or High for 3–4 hours, until the chicken is fully cooked and tender.
  • Remove the chicken and shred it using two forks.
  • Return the shredded chicken to the slow cooker and stir well to coat it in the sauce.
  • Cook for an additional 15–20 minutes on the Warm setting to allow the flavors to blend.
  • Serve on toasted buns or with your favorite side dishes.
