- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14–15 ounces) diced tomatoes, undrained
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
Wash the zucchini and trim the ends. Cut it into bite-sized half-moons or chunks. Dice the onion and mince the garlic.
Heat a large deep skillet over medium-high heat. Add the ground beef and cook for approximately 5–7 minutes, breaking it apart with a spoon until browned and fully cooked.
Add the olive oil if the skillet is dry. Stir in the diced onion and cook for 2–3 minutes until softened.
Add the minced garlic and cook for about 30 seconds, stirring constantly.
Add the chopped zucchini to the skillet. Cook for approximately 4–5 minutes, stirring occasionally, until the zucchini begins to soften but still retains some texture.
Stir in the diced tomatoes, tomato paste, Italian seasoning, paprika, onion powder, garlic powder, salt, black pepper, and red pepper flakes if using.
Reduce the heat to medium-low and simmer for about 8–10 minutes. Stir occasionally until the zucchini reaches your preferred tenderness and the tomato mixture thickens slightly.
Sprinkle the cheddar and mozzarella evenly over the top.
Remove the skillet from the heat. Sprinkle with fresh parsley or basil and a little Parmesan cheese if desired.
