- 2 medium zucchini, grated
- 1½ cups fresh or frozen corn kernels (thawed if frozen)
- 2 large eggs
- ¾ cup all-purpose flour
- ½ cup grated Parmesan cheese
- ½ cup shredded sharp cheddar cheese
- 2 green onions, finely sliced
- 1 tablespoon chopped fresh chives
- 2 cloves garlic, minced
- 1 teaspoon baking powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2–3 tablespoons olive oil or vegetable oil for frying
Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much moisture as possible.
Transfer the zucchini to a large mixing bowl.
Add the corn, eggs, flour, Parmesan cheese, cheddar cheese, green onions, parsley, chives, garlic, baking powder, smoked paprika, salt, and black pepper.
Mix until all the ingredients are evenly combined.
Heat the oil in a large non-stick skillet over medium heat.
Scoop about ¼ cup of the mixture into the skillet for each fritter.
Flatten each fritter slightly with the back of a spatula.
Cook for 3–4 minutes per side until golden brown and crispy.
Transfer the cooked fritters to a paper towel-lined plate.
