- 2 medium zucchini, grated
- ½ teaspoon salt
- 1 large egg
- ¼ cup all-purpose flour or breadcrumbs
- 2 tablespoons onion, finely chopped
- 1 clove garlic, minced
- 2 tablespoons fresh parsley or dill, chopped
- Freshly ground black pepper, to taste
Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes.
Squeeze out excess moisture from zucchini using a clean cloth.
Transfer zucchini to a bowl and add egg, flour, cheese, onion, garlic, herbs, and pepper. Mix well.
Heat olive oil in a pan over medium heat.
Scoop small portions of the mixture into the pan and flatten gently.
Cook for 3–4 minutes per side until golden and crisp.
Drain on paper towels and serve warm.
