Ingredients
  

  • 2 medium zucchini, grated
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup all-purpose flour or breadcrumbs
  • 2 tablespoons onion, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons fresh parsley or dill, chopped
  • Freshly ground black pepper, to taste

Instructions
 

  • Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes.
  • Squeeze out excess moisture from zucchini using a clean cloth.
  • Transfer zucchini to a bowl and add egg, flour, cheese, onion, garlic, herbs, and pepper. Mix well.
  • Heat olive oil in a pan over medium heat.
  • Scoop small portions of the mixture into the pan and flatten gently.
  • Cook for 3–4 minutes per side until golden and crisp.
  • Drain on paper towels and serve warm.

  • Removing excess moisture is essential for crisp patties.
  • Adjust seasoning to taste.
  • Cheese adds flavour but is optional.
  • Best served fresh and hot.
  • Batter should be thick, not runny.
