Ingredients

For the zucchini

  • 4 medium zucchini, sliced into rounds or half-moons
  • 2 tablespoons olive oil
  • 2 cloves garlic, finely minced
  • 2 tablespoons fresh dill, chopped
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • 1 teaspoon lemon juice

For the garlic-yogurt sauce

  • 1 cup plain Greek yogurt or thick plain yogurt
  • 1 small garlic clove, finely grated or crushed
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, finely chopped
  • A pinch of salt
  • 1–2 tablespoons water, if needed to adjust consistency

Optional garnish

  • Extra chopped dill
  • A drizzle of olive oil
  • A pinch of paprika or black pepper

Instructions

  • Wash the zucchini thoroughly and pat them dry. Cut them into evenly sized rounds or half-moons so they cook uniformly.
  • Combine the yogurt, crushed garlic, lemon juice, chopped dill, and a pinch of salt in a bowl. Stir until smooth. Add a little water if the sauce is too thick. Refrigerate while preparing the zucchini.
  • Heat olive oil in a large skillet over medium heat. Add the zucchini in a single layer, working in batches if necessary. Cook for approximately 8–12 minutes, turning occasionally, until tender and lightly golden.
  • Add the minced garlic during the final 1–2 minutes of cooking to prevent it from burning. Season with salt and black pepper, then stir in the fresh dill and lemon juice.
  • Arrange the cooked zucchini on a serving plate. Spoon the garlic-yogurt sauce over the top or serve it alongside as a dip. Finish with extra dill, black pepper, and a light drizzle of olive oil. Serve immediately or allow the zucchini to cool before serving.

Notes

  • Choose fresh zucchini: Smaller or medium zucchini often have a tender texture and fewer large seeds.
  • Dry thoroughly: Removing excess water helps the zucchini brown instead of steam.
  • Avoid overcrowding: Cook in batches for better color and texture.
  • Use fresh dill: Fresh dill gives the sauce a brighter flavor, although dried dill can work in a pinch.
  • Add garlic carefully: Cooking garlic briefly prevents it from becoming bitter.
  • Adjust the sauce: Thick Greek yogurt creates a rich dip, while regular yogurt produces a lighter dressing.
  • Balance the flavors: A little lemon juice cuts through the creaminess of the yogurt.
  • Keep the sauce cool: Add the yogurt sauce after cooking rather than heating it in the skillet.
