  • 1 whole turkey (12-14 lbs)
  • 1/4 cup olive oil or melted butter
  • 2 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp smoked paprika
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 lemon, zested
  • 4 cloves garlic, minced

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Place the turkey breast-side down on a cutting board.
  • Using kitchen shears, cut along both sides of the backbone and remove it.
  • Flip the turkey over and press down firmly on the breastbone to flatten.
  • Pat the turkey dry and rub with olive oil or melted butter.
  • Mix salt, pepper, garlic powder, onion powder, paprika, rosemary, thyme, lemon zest, and minced garlic in a bowl.
