  • 2 medium onions, finely chopped
  • 3 ripe tomatoes, chopped
  • 2 green chilies, slit
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • tsp garam masala
  • 1 sprig curry leaves
  • 1 tbsp oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
 

  • Heat oil in a pan over medium heat.
  • Add mustard seeds and cumin seeds. Let them splutter.
  • Add chopped onions and green chilies. Sauté until onions turn soft and translucent.
  • Stir in curry leaves, turmeric powder, and red chili powder. Cook for a minute.
  • Add chopped tomatoes and salt. Cook until tomatoes soften and release juices.
  • Add coriander powder and garam masala. Stir well and simmer for a few minutes.
  • Garnish with fresh cilantro and serve hot with rice or chapati.
