- 2 cups sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 4 large eggs
- 1/4 cup orange juice
- 2 teaspoons vanilla extract
- 4 cups apples, peeled and sliced thin
- 2 teaspoons ground cinnamon
- 2 tablespoons sugar (for apple mixture)
Preheat oven to 350°F (175°C). Grease and flour a bundt or tube pan.
In a small bowl, toss apples with cinnamon and 2 tablespoons sugar. Set aside.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Add oil, eggs, orange juice, and vanilla to the dry ingredients; mix until well combined.
Pour half the batter into the prepared pan. Layer with half of the apples. Repeat with remaining batter and apples.
Bake for 55–65 minutes, until golden brown and a toothpick inserted in the center comes out clean.
Cool in the pan for 15 minutes before removing. Slice and serve warm or at room temperature.
