A fresh and healthy Avocado Cucumber Salad with creamy avocado, crunchy cucumber, and a zesty lime dressing.

- 2 ripe avocados, diced
- 1 large cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro or parsley, chopped
- 1 tbsp olive oil
- 1 tbsp lime juice
- 1/2 tsp salt
- 1/4 black pepper
- Optional: 1/2 teaspoon red pepper flakes for spice
In a large bowl, combine diced avocados and cucumbers.
Add sliced red onion and fresh cilantro (or parsley).
Drizzle with olive oil and lime juice.
Season with salt, black pepper, and red pepper flakes if using.
Gently toss the salad to mix all the ingredients.
Serve immediately or chill for 10 minutes before serving.
