Ingredients
  

  • 2 ripe avocados, diced
  • 1 large cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 black pepper
  • Optional: 1/2 teaspoon red pepper flakes for spice

Instructions
 

  • In a large bowl, combine diced avocados and cucumbers.
  • Add sliced red onion and fresh cilantro (or parsley).
  • Drizzle with olive oil and lime juice.
  • Season with salt, black pepper, and red pepper flakes if using.
  • Gently toss the salad to mix all the ingredients.
  • Serve immediately or chill for 10 minutes before serving.

Notes

  • Use a firm but ripe avocado to prevent it from becoming too mushy.
  • You can add cherry tomatoes or feta cheese for extra flavor.
  • Best served fresh, but can be stored in an airtight container for up to 1 day.
