  • 2 pounds baby potatoes, halved (or russet potatoes, diced)
  • 2 tablespoons olive oil
  • 1½ teaspoons ranch seasoning mix
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 2 cups cooked chicken breast, diced or shredded
  • 8 slices bacon, cooked and crumbled
  • ½ cup mayonnaise
  • 2 cups shredded sharp cheddar cheese, divided
  • 2 tablespoons chopped green onions

Instructions
 

  • Preheat the oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  • In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper.
  • Spread the potatoes on a baking sheet and roast for 25–30 minutes, stirring halfway through, until just tender.
  • Reduce the oven temperature to 375°F (190°C).
  • In a large bowl, combine the roasted potatoes, cooked chicken, bacon, sour cream, mayonnaise, green onions, parsley, and 1½ cups of shredded cheddar cheese.
  • Mix gently until all ingredients are evenly coated.
  • Transfer the mixture to the prepared baking dish.
  • Bake for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.
  • Remove from the oven and garnish with extra bacon, parsley, and green onions before serving.
